It is just not a food, it’s an emotion. Food has a magical way of connecting us to memories, cultures, and people. It’s not just fuel for the body. And when it comes to festive occasions, there’s one dish that stands out above the rest: Biryani.


WHAT IS BIRYANI:

It is not just a meal, it is a delicious flavour of layered rice, chicken, and aromatic spices (masala) like cardamom, cinnamon, cloves, cumin, etc. That makes it so special.


While there are many regional variations—from Hyderabadi to Lucknowi, Kolkata to Karachi—the core elements remain the same: rice, chicken, spices, and love.




The Magic of Chicken Biryani:

Among all the versions of biryani, chicken biryani is arguably the most popular.The fragrant basmati rice is cooked with marinated chicken, the blend of spices like cardamom, cumin, nutmeg, etc. And the richness that comes from the slow-cooked method—it’s unbeatable. The slight crispiness of the rice, the tenderness of the chicken, and that burst of flavor in every bite is like nothing else.


Recipe of Chicken Biryani: A Simple Guide for Home Cooks

Recipe to help you recreate restaurant-style magic at home.


For the Chicken Marinade:


  • 500g chicken (with or without bone)

  • 1 cup plain yogurt

  • 1 tablespoon ginger-garlic paste

  • 1 teaspoon turmeric powder

  • 1 teaspoon red chili powder

  • 1 teaspoon salt

  • 1.5 tablespoons biryani masala


For the Rice:



  • 2 cups biryani rice (basmati)


  • 4–5 cups water


  • Kewra Water


  • Rose Water

  • Oil


  • 2-3 cloves

  • 2 green cardamoms

  • 1 small cinnamon stick

  • 1 bay leaf

  • Salt to taste


For Its Layer:




  • 2 medium onions, thinly sliced and fried until golden brown (birista).

  • A few saffron strands soaked in 2 tbsp warm milk.

  • 2 tablespoons of ghee or butter.


  • Fresh coriander and mint leaves.

Step-by-Step Cooking Guide:

Step 1: Marinate the Chicken

  • In a bowl, mix chicken with yogurt, ginger-garlic paste, masalas, chili powder, and salt. Let it marinate for at least 1–2 hours for deeper flavor.


Step 2: Cook the Rice

  • Rinse and soak the basmati rice in water for 20–30 minutes.

  • Boil 6–8 cups of water with bay leaf, cinnamon, cloves, salt, add 1-2 lemon juice and few drops of kewra water & rose water.

  • Add the soaked rice and cook until it’s 70–80% done (the grains should be firm).

  • Drain and set aside.


Step 3: Cook the Chicken

  • In a deep pan or pot, heat ghee or oil. Sauté sliced onions until golden brown.


  • Add marinated chicken and cook for 10–15 minutes until chicken is mostly cooked and oil begins to separate.

  • Add half of the mint and coriander leaves.


Step 4: Layering the Biryani

  • In a heavy-bottomed pot, start layering:

    • First, a layer of cooked chicken.

    • Then, a layer of partially cooked rice.

    • Sprinkle fried onions, saffron milk, mint, and coriander.

    • Repeat until all chicken and rice are used up. Finish with rice on top and some ghee.

Step 5: Dum Cook (Final Steam)

  • Cover the pot tightly with a lid (or seal with dough).

  • Cook on low heat for 20–25 minutes.

  • Turn off the heat and let it rest for 10 minutes before opening.


Tips for the Perfect Biryani:

  • Serve with raita, salad, or a spicy gravy or curry (Optional) for the complete experience.

  • For vegetarian biryani, substitute chicken with paneer, tofu, or mixed vegetables.
